Clouds at Sunrise

Yield: 12 to 15 servings

Ingredients

Base

  • 6 egg whites
  • 3/4 teaspoon cream of tartar
  • 2 cups granulated sugar
  • 2 cups (about 45) crushed soda crackers (or club crackers)
  • 3/4 cup chopped nuts
  • 2 teaspoons vanilla extract

Topping

  • 2 cups whipped cream or 1 (8 ounce) container Cool Whip, thawed
  • 1 (21 ounce) can cherry pie filling

Instructions

  1. Heat oven to 350 degrees F. Butter a 13 x 9 inch glass baking dish well.
  2. Beat egg whites until frothy.
  3. Add cream of tartar, then gradually add sugar. Beat until stiff.
  4. Fold in crushed crackers, nuts and vanilla extract.
  5. Spread in prepared baking dish.
  6. Bake for 25 minutes.
  7. Cool on rack.
  8. Spread whipped cream over top and spoon pie filling over cream.
  9. Chill for several hours or overnight before serving.
