Creamy Lemon-Honey Gelatin

Creamy Lemon-Honey Gelatin, made from yogurt, lemon Jell-O, honey and blueberries for an unforgettable dessert.

Creamy Lemon-Honey Gelatin

Prep: 10 min | Yield: 16 servings, about 1/2 cup each

Ingredients

  • 2 (32 ounce) containers plain low-fat yogurt, divided
  • 4 (3 ounce) boxes Jell-O Lemon Flavor Gelatin
  • 1/3 cup honey, divided
  • 2 cups blueberries

Instructions

  1. Bring 1 container yogurt to boil in a large saucepan over medium heat, stirring constantly. Remove from heat.
  2. Add gelatin; stir with a whisk for 2 minutes until completely dissolved.
  3. Add remaining yogurt and 1/4 cup honey; mix well.
  4. Pour into a 10 cup gelatin mold sprayed with cooking spray.
  5. Refrigerate for 4 hours or until firm.
  6. Unmold gelatin onto plate.
  7. Drizzle with remaining honey just before serving; top with berries.

Notes

For individual servings: Prepare as directed, dividing gelatin mixture among 16 (4 ounce) custard cups or serving glasses before refrigerating. Unmold, if necessary. Continue as directed.

Prepare using your favorite flavor of Jell-O Gelatin.

For added crunch, serve topped with your favorite granola.
