Creamed Yellow Crookneck Squash
Ingredients
- 2 pounds yellow crookneck squash
- 1 medium onion, chopped
- About 1 cup water
- 1/2 stick butter
- Salt and pepper
- 1/2 to 3/4 cup milk
Instructions
- Do not peel the squash. Slice them into 1/4 inch slices.
- Add sliced squash to a large skillet along with onion, water, butter, salt and pepper. Cook until squash and onion are tender and the water used to steam the vegetables has cooked away.
- Add milk and cook down until it looks "curdled."
