Dutch Baby

A Dutch Baby is also known as a German Pancake.

Dutch Baby recipe

Yield: 1 large pancake to serve two

Ingredients

  • 1/2 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 3 eggs
  • 1 teaspoon vegetable oil
  • 1/2 cup milk
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 2 teaspoons butter

Instructions

  1. Heat oven to 400 degrees F. Place a cast iron skillet in the oven.
  2. Add flour, sugar, salt, eggs, oil, milk, cinnamon, nutmeg and vanilla extract to a blender. Blend until well combined, scraping sides frequently.
  3. Add butter to the cast iron skillet and let it melt for about 2 minutes.
  4. Pour batter into skillet and bake for 20 minutes.
  5. Carefully remove pancake from skillet, cut in half, sprinkle with lemon and confectioners' sugar, if desired, and serve.
  6. Serve as soon as it comes out of the oven so that it is still puffy when served.
