Spicy Toasted Cheese and Olive Sandwich Loaves

Yield: about 8 generous servings

Ingredients

Sandwich filling

  • 1 stick (1/4 pound) butter or margarine, softened
  • 1/4 cup mayonnaise
  • 1/2 pound Mozzarella cheese, grated (2 cups)
  • 1 (2.25 ounce) can sliced ripe (black) olives
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Dash cayenne pepper

Bread

  • 1 (1 pound) loaf unsliced French or Italian bread, sliced in half lengthwise

Instructions

  1. In a small bowl (if serving later, choose one with an airtight lid), blend the softened butter and mayonnaise until smooth. Stir in the remaining filling ingredients. Use immediately or cover and refrigerate until ready to use.
  2. Just before serving, preheat the oven to 350 degrees F. Set aside a large baking sheet.
  3. Spread half of the mixture on each loaf half; arrange on the baking sheet.
  4. Bake the loaves in the preheated oven for 10 to 15 minutes, or until the cheese is melted and the edges of the loaves are lightly toasted.
  5. Serve hot.
