Yield: one recipe makes enough mix for 24 servings
To make pudding
1 1/4 cups vanilla, chocolate or caramel Pudding Mix
2 1/2 cups warm water
1 tablespoon butter or margarine
1 egg, beaten
3/4 teaspoon vanilla extract
Combine Pudding Mix with the water in saucepan. Place over low heat and cook until thickened, stirring constantly. Cover and cook for 10 minutes longer.
Add the fat. Remove from heat and beat half of the hot mixture into the egg. Blend slowly into the remaining hot mixture. Cook over low heat 1 minute longer. Remove from heat and stir in vanilla extract.
Makes 6 servings.
Caramel Pudding Mix
Substitute 1 1/2 cups brown sugar, packed, for granulated sugar.
Chocolate Pudding Mix
Add 3/4 cup cocoa powder to other ingredients before stirring.
