Creamy Lemon Bars
Ingredients
Crust
- 4 cups vanilla wafers
- 1/3 cup pecans, finely chopped
- 1/3 cup butter or margarine, melted
- 1 tablespoon granulated sugar
Filling
- 16 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 egg
- 1 lemon
Instructions
- Heat oven to 350 degrees F.
- Using food chopper, finely chop wafers and pecans. Reserve 1/2 cup.
- In bowl, combine chopped wafers, nuts and melted butter. Press onto bottom of 9 x 13 inch baker.
- In bowl combine cream cheese, sugar and egg. Using lemon zester/scorer, zest 1 tablespoon lemon peel.
- Using lemon aid, squeeze 3 tablespoons of lemon juice; add peel and juice to cream cheese. Cream mixture until smooth using wooden spoon. Using super scraper, spread over crust. Sprinkle with reserved 1/2 cup chopped wafers.
- Bake for 20 to 25 minutes or until set. Cool.
