Powdered Sunshine Kisses

Yield: 3 dozen

Ingredients

  • 1 (18.25 ounce) box lemon cake mix*
  • 1 egg, lightly beaten
  • 1/3 cup vegetable oil
  • 2 tablespoons water
  • 1/3 cup pecans, chopped
  • Powdered sugar

Instructions

  1. Heat oven to 375 degrees F.
  2. Combine cake mix, egg, oil, and water in Classic Batter Bowl; stir with Mix 'N Scraper® until thoroughly combined. Mixture will be slightly dry.
  3. Chop nuts with Food Chopper. Transfer nuts to Batter Bowl using Handy Scraper; mix well. Using Small Scoop drop level scoops of dough 2 inches apart onto flat Baking Stone.
  4. Bake for 13 minutes or until light golden brown.
  5. Cool for 3 minutes on Baking Stone; remove to Stackable Cooling Rack. Repeat with remaining dough. Cool completely.
  6. Fill Flour/Sugar Shaker with powdered sugar. Sprinkle cookies with powdered sugar.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16 ounce boxes. To compensate for the volume loss, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe.
