Tipsy Peach Cobbler

Ingredients

Filling

  • 1 quart (4 cups) fresh or frozen peaches
  • 1/4 cup brown sugar
  • 1/4 cup DeKuyper Buttershots (butterscotch-flavored liqueur)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice
  • 2 tablespoons butter

Crust

  • 3/4 cup butter
  • 3/4 cup self-rising flour
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 3/4 cup milk
  • 1/4 cup DeKuyper Buttershots
  • 1 teaspoon vanilla extract

Instructions

Filling

  1. Combine peaches with 1/4 cup brown sugar, 1/4 cup Buttershots, vanilla extract, lemon juice and 2 tablespoons butter and marinate for at least 1 hour, then boil over medium heat for 10 minutes.

Crust

  1. Melt 3/4 cup butter in an 8 inch square dish.
  2. Combine remaining ingredients; pour mixture into melted butter, then add peaches.
  3. Bake at 350 degrees F for 30 to 35 minutes or until golden brown.
  4. Serve warm with French vanilla ice cream and caramel sauce, such as Smucker's.
