Red Raspberry Streusel Pie

Ingredients

Filling

  • 1 (8 ounce) container sour cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups fresh or frozen raspberries or 2 cups red raspberry pie filling
  • 1 unbaked pie shell

Topping

  • 3 tablespoons chopped pecans
  • 3 tablespoons granulated sugar
  • 4 tablespoons all-purpose flour
  • 4 tablespoons butter

Instructions

  1. Combine the first six ingredients and beat for 5 minutes or until smooth. Spread 1/2 to 3/4 of mixture in bottom of unbaked pie shell.
  2. Dot raspberry filling over this and swirl with a fork or knife.
  3. Pour in remaining sour cream mixture and bake at 375 degrees F for 30 minutes or until done.
  4. Meanwhile, make the Topping. Combine flour and sugar; cut in butter until mixture is like coarse meal.
  5. Stir in pecans. Sprinkle over pie and bake for another 10 minutes or until topping is lightly brown.
