Mini Quiches

Mini Quiches made in tiny muffin tins would make wonderful appetizers.

Mini Quiches recipe

Yield: 12 small or 24 tiny quiches

Ingredients

  • Tiny or medium muffin tins

Quiches

  • 1/2 cup softened butter
  • 1 (3 ounce) package cream cheese
  • 1 cup all-purpose flour
  • 1 cup grated Swiss cheese
  • 3 strips crisp bacon or ham, chopped
  • 1 large egg, beaten
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • Paprika

Instructions

  1. Mix butter and cream cheese by creaming together. Work in flour and chill.
  2. When ready to bake, divide into 24 tiny balls for tiny cups or 12 balls for medium cups, press into greased tins. Divide cheese and bacon into cups. Beat milk and salt together, spoon over cheese into cups. Sprinkle with paprika.
  3. Bake at 350 degrees F for 30 minutes.
  4. These freeze well. Reheat to serve.
