Food is more fun on a stick, and a muffuletta sandwich is no exception! These Muffuletta Olive Skewers are perfect for an easy lunch box meal, after school snack, or even game day!

Muffuletta Olive Skewers

Ingredients

Skewers

  • 8 ounces focaccia bread, chopped into 2 inch cubes
  • 6 slices mortadella, folded
  • 1/2 cup Lindsay Olives Organic Green Olives Stuffed with Garlic
  • 6 slices sopressata, folded
  • 6 slices sopressata, folded
  • 2 slices provolone cheese, rolled and cut into 6 pieces
  • 6 slices salami, folded
  • 1/2 cup Lindsay Olives Organic Medium Black Ripe Pitted Olives
  • Olive oil, for drizzling (optional)

Instructions

  1. Thread a 9 inch skewer with focaccia bread, mortadella, green olive, sopressata, provolone cheese, salami, green olive, focaccia bread and a black ripe pitted olive.
  2. Repeat for remaining skewers. Drizzle the focaccia with a little olive oil, if desired.
  3. Serve with remaining olives.
