World's Best Cajun Chicken Pasta

Ingredients

  • Large sauce pan

Chicken

Pasta

  • 8 ounces linguine pasta
  • 1 clove garlic
  • 1/4 small onion
  • 1 teaspoon corn oil
  • 1/2 teaspoon salt

Cajun Sauce

  • 2 tablespoons corn oil
  • 3/4 small onion
  • 4 cloves garlic
  • 2 tablespoons butter
  • 2 cups heavy cream
  • 4 units green onion, chopped
  • 1/4 cup sun-dried tomatoes
  • 2 ounces fresh basil leaves chiffonade
  • 2 tablespoons OMG's Chicken Cajun Seasoning

Garnishes and Toppings

  • 2 ounces freshly shaved or grated Parmesan cheese
  • 1 tablespoon finely chopped green onion

Instructions

Chicken

  1. Cut the chicken breasts into 1-inch cubes.
  2. In a bowl, add the Cajun seasoning to the chicken and rub all over so that all the chicken cubes are covered well.
  3. Cover the bowl with plastic wrap and place in the refrigerator for about 15 minutes.
  4. Ten minutes after you place the chicken in the refrigerator, begin the Pasta.

Pasta

  1. Add 2 quarts (8 cups) water to the sauce pan. Add the oil, salt, garlic and onion. Bring to a boil.
  2. Add the linguine pasta, and let it cook for about 10 minutes or follow the instructions on the package so that the pasta cooks al dente. While you cook the pasta, you can prepare the sauce.
  3. When ready, drain the pasta. Remove onion pieces and garlic, if desired.

Sauce

  1. Remove the butter from the refrigerator and let it sit at room temperature for about 5 minutes to soften it. You can do this while you cook the pasta.
  2. Place a sauce pan over high heat. When the pan gets very hot, add the corn oil.
  3. Turn the heat to medium-high, and add the onion; stir so that all the onion is covered with oil.
  4. Saute the onion until it starts to become clear in color.
  5. When the onion becomes translucent, add the garlic; stir and saute until it starts turning light brown.
  6. Add the softened butter and stir along with the onion and garlic until it melts.
  7. Remove chicken from the refrigerator and spread the chicken so that the butter, onion and garlic are spread evenly among the chicken cubes.
  8. Saute the chicken for about 12 minutes. The chicken should be almost cooked.
  9. Add the heavy cream.
  10. Add the chopped green onion, sun-dried tomatoes, fresh basil chiffonade and OMG's Chicken Cajun Seasoning.
  11. Bring the heavy cream to a boil, and then reduce the heat so that it slowly simmers. You should let it simmer for about 15 minutes. The sauce should be slightly reduced during this process. By this time the pasta should be drained.
  12. Add the pasta to the sauce and let it simmer for about 3 minutes.

Plating

  1. Plate the pasta in your favorite dishes.
  2. Shave or grate the Parmesan cheese over the pasta, and add a few sprinkles of the finely chopped green onion on top.
