Crunchy Avocado Chicken Salad

Enjoy a delicious mix of flavor and textures with this chicken salad featuring creamy fresh avocado, crunchy pecans and chewy dried cranberries.

Crunchy Avocado Chicken Salad

Yield: 2 (1 cup) servings

Ingredients

  • 1 ripe, fresh avocado, halved, pitted, peeled, diced and divided
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon cracked black pepper
  • 8 ounces cooked chicken breast, diced into 1/2 inch pieces
  • 1 ounce unsalted pecans, chopped
  • 1/4 cup dried cranberries, chopped

Instructions

  1. Place 2 tablespoons of the diced avocado in a medium bowl and mash with a fork.
  2. Stir in Greek yogurt, apple cider vinegar, celery salt and pepper until blended.
  3. Add diced cooked chicken breast, chopped pecans and cranberries.
  4. Gently mix in remaining diced avocado.
  5. Serve in lettuce leaves or on crackers or whole grain bread.
