Hawaiian Yams
Ingredients
Yams
- 2 cups cooked, mashed sweet potatoes
- 2 eggs
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- 1/2 (3 1/2 ounce) can coconut
- 1 (5 ounce) can evaporated milk
Topping
- 1 (8 ounce) jar maraschino cherries with juice
- 1 (8 ounce) can crushed pineapple with juice
- 1 1/2 tablespoons cornstarch
- 3/4 cup granulated sugar
Instructions
Yams
- Mix together potatoes, eggs, salt, vanilla extract and sugar with an electric mixer.
- Mix in coconut and milk.
- Pour into large pie pan or small casserole dish.
- Bake for 45 minutes at 350 degrees F.
- Pour and spread Topping over the top of potatoes after they are removed from oven.
- Cool for about 10 minutes before serving.
Topping
- Mix together topping ingredients in saucepan. Boil for 2 minutes, stirring constantly.
