Parmesan and Parsley Roasted Almonds

Parmesan and Parsley Roasted Almonds

Yield: 6 servings

Ingredients

  • 1 1/2 cups (about 6 ounces) raw unsalted whole almonds
  • 4 tablespoons grated Parmesan cheese (vegetarian, if desired), divided
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon garlic powder
  • 1 teaspoon chopped fresh parsley
  • Dash of salt

Instructions

  1. Heat oven to 325 degrees F.
  2. In a large bowl, combine the almonds, 3 tablespoons grated Parmesan, olive oil, garlic powder, parsley and salt. Stir well to combine.
  3. Spread almond mixture on a parchment lined baking sheet. Bake for 10 minutes.
  4. Once out of the oven, let the almonds cool for 10 minutes and sprinkle remaining one tablespoon of Parmesan cheese on top.
