Chicken-Dumpling Stew
Ingredients
- 1 (2 to 3 pound) chicken, cut up
- 2 tablespoons butter
- 1/2 cup water
- 1 cup sliced onion
- 1 cup sliced carrot
- 1 cup sliced celery
- 1/4 teaspoon poultry seasoning
- 1 can cream of chicken soup
- 1 (10 ounce) package frozen mixed vegetables
- 1 cup Bisquick or homemade Biscuit Mix
- 1/3 cup milk
Instructions
- Sprinkle chicken with 1/2 teaspoon salt and a dash of pepper. Brown in butter in large, heavy pan.
- Add water, onion, carrot, celery and poultry seasoning, cover and simmer for 30 minutes.
- Stir in soup and mixed vegetables, bring to boil, cover and simmer for 10 more minutes, stirring now and then.
- Combine biscuit mix and milk; spoon dumplings onto stew. Cook uncovered for 10 minutes.
- Cover and cook 10 minutes longer.
