Potato Soup
In the South, this is often called "Stewed Potatoes." This is the most simple potato soup you can make.
Ingredients
- 6 medium potatoes scrubbed, peeled and cubed
- Water
- 3 cups milk
- 4 tablespoons butter
- Salt and white pepper to taste
Instructions
- Cover potatoes with water in a large soup pot.
- Cook over medium heat until fork tender, about 20 minutes. Remove from heat and drain completely.
- Add milk and butter to the potatoes. Place over medium heat and allow milk to bubble slightly around the edges of the soup pot, about 5 to 10 minutes.
- If desired, remove some of the potatoes, mash the potatoes in the soup pot, and return the cubed potatoes to the soup.
- Add salt and white pepper to taste.
- Remove from heat and ladle into soup bowls.
- Garnish with bacon crumbles, if desired.
