Potato Soup

In the South, this is often called "Stewed Potatoes." This is the most simple potato soup you can make.

Potato Soup

Ingredients

  • 6 medium potatoes scrubbed, peeled and cubed
  • Water
  • 3 cups milk
  • 4 tablespoons butter
  • Salt and white pepper to taste

Instructions

  1. Cover potatoes with water in a large soup pot.
  2. Cook over medium heat until fork tender, about 20 minutes. Remove from heat and drain completely.
  3. Add milk and butter to the potatoes. Place over medium heat and allow milk to bubble slightly around the edges of the soup pot, about 5 to 10 minutes.
  4. If desired, remove some of the potatoes, mash the potatoes in the soup pot, and return the cubed potatoes to the soup.
  5. Add salt and white pepper to taste.
  6. Remove from heat and ladle into soup bowls.
  7. Garnish with bacon crumbles, if desired.
