Dolly Madison's Fairy Butter

Dolly brought this to the White House. It was that extra touch that she loved and popular with other Virginia cooks as well.

Ingredients

  • 2 hard boiled eggs
  • 1 tablespoon orange flower water
  • 1 tablespoon powdered sugar
  • Butter, room temperature

Instructions

  1. Beat and mash the egg yolks until fine grained.
  2. Add orange flower water and powdered sugar; beat until you have a fine paste, mixing well.
  3. Combine with equal amounts of butter and force through a fine strainer, with holes, onto a fancy plate.
