Asado de Cerdo

Ingredients

  • 1 tablespoon vegetable oil
  • 2 pounds thin, boneless pork chops or pork roast, cubed
  • Salt
  • Pepper
  • 1 tablespoon garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups water
  • 1 tablespoon cumin
  • 3 -5 tablespoons chili powder

Instructions

  1. Heat oil in a heavy pot.
  2. Add pork, salt and pepper, stirring until well browned and most of the liquid is vaporated.
  3. Add garlic and saute 1 minute more.
  4. Add flour, stirring until thoroughly coated.
  5. Add water all at once.
  6. Add cumin and chili powder.
  7. Stir thoroughly until gravy is dark and velvety smooth.
  8. Add more chili powder to taste.
  9. Bring to boil, reduce heat, cover and simmer for 20 minutes or until pork is tender.
  10. Serve with rice and tortillas.
