Pickled Red Onion
Pickled Red Onion is a delightful condiment to serve on tacos or alongside or on top other Mexican dishes.
Yield: about 1 pint
Ingredients
- 1 red onion, thinly sliced
- 1 cup white vinegar
- 1 teaspoon whole peppercorns
- 2 cloves garlic, minced
- 1 tablespoon salt
- 1 1/2 tablespoons granulated sugar
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Add sliced onions to a Mason jar.
- Add the remaining ingredients, including red pepper flakes, if desired, to a small pot over medium high heat. Bring to a boil, making sure that the salt and sugar dissolve completely. Let the mixture come to a simmer, then remove from heat.
- Allow onion mixture to cool to room temperature; cover with lid and refrigerate until ready to use. Wait for 2 hours before using.
- Serve with street tacos or alongside Mexican food.
