Pudding and Mousse Recipes

Boiled Custard

6 eggs
3 cups granulated sugar
2 quarts milk, divided
2 tablespoons cornstarch
1/2 package miniature marshmallows
2 teaspoons vanilla extract

Beat eggs, then add sugar. In double boiler, heat 1/2 quart of the milk until it comes just to the boiling point. Take 2 cups of hot milk and mix well with the cornstarch. Slowly add this to egg and sugar mixture, stirring constantly. Then add the egg mixture to the remaining milk. Stir custard slowly over medium heat, in double boiler, until custard thickens. Add marshmallows and stir until marshmallows are dissolved. Remove from heat and let cool. Add vanilla extract, then chill immediately.

Serves 8 to 12.
