Chocolate Mint Brownie Cookies Mix in a Jar recipe

Layer the following ingredients in a 1-quart jar, packing down well between layers:

1 3/4 cups unbleached flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup brown sugar
1/2 cup granulated sugar
3/4 cup mint chocolate chips
Another 3/4 cup mint chocolate chips (put into a zip-top bag
    and placed atop the other chocolate chips)

Chocolate Mint Brownie Cookies:

Heat oven to 350 degrees F.

Melt chocolate chips from zip-top bag in a saucepan over lowest heat. When chips begin to melt, remove from heat; stir. Return to heat for a few seconds at a time, stirring until smooth. Cool to room temperature.

In a mixing bowl, combine melted chocolate chips, 1/2 cup softened butter, 2 teaspoons vanilla extract and 2 whipped egg whites. Stir until smooth. Slowly add the remaining contents of the jar to the melted chocolate mixture. Mix just until moistened. Drop dough by rounded tablespoons onto prepared baking sheets. Bake for 12 minutes or until edges are set, but centers are still soft.
