Memphis City Schools Carrot Cake

Ingredients

  • 1 cup granulated sugar
  • 3/4 cup vegetable oil
  • 1 1/2 cups grated carrots
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup chopped raisins
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder

Instructions

  1. Heat oven to 350 degrees F. Grease and flour a 13 x 9 inch cake pan.
  2. Beat eggs with sugar, one at a time.
  3. Mix dry ingredients.
  4. Add oil to dry ingredients and mix with eggs and sugar.
  5. Add carrots.
  6. Pour into prepared pan.
  7. Bake for 25 minutes.
